Super Salad: Quinoa, Avocado, Strawberry, Pistachio and Beets Sautéed in Coconut Cream

Quinoa beet avocado salad: Serves 4

Ingredients

1 cup quinoa

2 large beets, scrubbed and cut into 3/4-inch pieces

1/4 cup homemade coconut cream

1 teaspoon cinnamon

2 Hass avocados, cut into 3/4-inch pieces

8 strawberries, cut into 3/4-inch pieces

1/2 cup salted pistachios, chopped

Handful of basil, chopped

Honey balsamic vinaigrette (I use this one)

Directions

Prepare quinoa and put aside covered to retain heat.

In a small sauté pan add beets, coconut cream and cinnamon. Sauté on medium heat for 5 minutes. Turn off gas and let sit for 15 minutes.

Prepare remaining ingredients.

Ladle quinoa into a large bowl and drizzle honey balsamic vinaigrette over top. Add beets, strawberries, avocado and top with pistachios and basil. Serve at room temperature.
